Rum Chata is actually the Spanish/South American drink horchata with rum added. While the type of horchata varies by region it is typically made from rice, milk, water, sugar and cinnamon/nutmeg.
First I tried the Rum Chata on ice with coffee and I definitely recommend it's sweet, tasty and not too strong. At 13.75% ABV, it can be added at larger ratios. Just be careful not to mix with anything too acidic or it will curdle. Next I tried a Rum Chata milk shake with vanilla ice cream and milk, which was superb.Finally I had an ice cream bowl with two slices of carrot cake soaked in Rum Chata. I think you can get a sense of the flavor palette here; goes well with ice cream, floats, pina colada, cream drinks, coffee, and also on the rocks.
